Peanut Butter Cupcakes (Patty Smith)
About 2 hours before serving or early in the day:
Preheat oven to 350 degrees. Grease twenty-four 2 1/2 inch muffin pan
Mix flour, milk, sugar, peanut butter, shortening, baking powder,
vanilla, salt, and eggs at low speed, beat until blended. Increase
speed to high; beat 2 minutes. Spoon batter into cups. Bake 18 to 20
minutes, until toothpick inserted in center of 1 cupcake comes out
clean. Cool in pan on wire racks 10 minutes; remove from pans; cool
completely on racks.
2 dozen cupcakes
Chocolate Frosting goes nicely on these.
