Spice Cake

1  C  Flour, Whole-Grain Wheat
1/3  C  Brown Sugar, or substitute
1/3  C  Cornstarch
2  Tsp  Baking Powder
1/2  Tsp  Salt, optional
1/2  Tsp  Cinnamon
1/8  Tsp  Ginger
1/8  Tsp  Nutmeg
2    Egg Whites, or substitute
2/3  C  Nonfat Milk, or nonfat soy milk
1/3  C  Corn Syrup, Dark
1  tsp  Vanilla

In a med. bowl, combine dry ingredients. In a sm. bowl, using a fork or wire whisk, mix egg whites or substitute, milk, corn syrup and vanilla. Add to flour mixture; stir until smooth. Pour into a sprayed 9" sq. pan and bake in a 350 deg F oven 25 - 30 min, or until a toothpick inserted in center comes out clean. Cool in pan on wire rack.
