Supereasy Chocolate Mousse

Ingredients:

10 1/2 oz Silken tofu, extra-firm,

-- drained & crumbled

3/4 c Semi-sweet chocolate chips

1 t Vanilla extract

Directions:
Blend tofu until it is smooth. Melt chocolate in a medium-sized pot placed in a water filled larger pot over medium heat. Blend chocolate & vanilla into the tofu until no white is visible. Spoon evenly into parfait glasses & chill for at least 1 hour before serving.
