Apple Turnovers

Ingredients:
    Cottage cheese and oil
    Pastry (1)
    FILLING:
1 1/8  pounds  To 1 3/4 lb (500-700g)
    Apples
1 3/4  ounces  To 2 1/2 oz (50-75g)sugar
1 3/4  ounces  (50g) sultanas (washed and
    Well drained)
3    To 4 drops baking essence
    Lemon flavor
    FOR BRUSHING:
    A little milk
    ICING:
3 1/2  ounces  (100g) icing sugar
1  tablespoon  Or 2 hot water

Directions:
FOR THE FILLING: peel and core apples and cut into pieces. Add the sugar and the sultanas and stew for a short time over a slow heat, stirring all the time. cool well through, sweeten to taste, then add the baking essence. Roll out the pastry thinly and cut out round shapes 4 in (10cm) in diameter. Pile some of the filling onto one half of the round and brush the edges thinly with milk. fold over the free half of the round and use a baking essence bottle to press the edges well together. Lay on a greased baking sheet. OVEN: Moderately hot BAKING TIME: about 15 min. FOR THE ICING: sieve the icing sugar and blend with as much of the water as will give a good coating consistency. Brush the turnovers with the icing as soon as they come out of the oven.
