Bakewell Tarts

50  g  butter
50  g  sugar
100  g  flour
1    egg
1    apple, peeled, cored, thinl
    little raspberry jam
    fewdrops almond essence
175  g  shortcrust pastry

1. Line a greased sandwich tin with rolled out pastry. 2. Spread with apple. Then spread jam over apple. 3. Gently cream sugar with butter. Gradually add egg and flour alternatively, beating all the time. Add almond essence. The mixture should have a good soft dropping consistency. Add a little milk if necessary. 4. Spread sponge mixture over flan and bake at 180 C for 35 mins. Serve hot or cold with custard or cream. Difficulty : moderate. Precision : measure ingredients.
