Baking Cheesecake in a Water Bath

If you are baking in a springform pan, you must wrap the bottom and sides to prevent water from seeping into the seams and ruining the care. Set the pan on a wide sheet of heavy-duty aluminum foil. Fold the foil up the sides of the pan, making sure there are no rips or holes. If you use a solid cake pan, line the bottom with a round of wax paper or parchment paper and grease the sides (there is no need to wrap the pan in foil).
