few drops red food coloring
ground ritz crackers
crushed pineapple or
pineapple pie filling
For filling: Beat cream cheese and powdered sugar until creamy. Add
red food coloring until pink. For crust: Beat egg whites until stiff,
adding sugar slowly; then add salt and vanilla. Fold in Ritz crackers
by hand. Pour into well-greased pie pan. Bake at 350 degrees for 30
minutes. Set aside to cool. When cool, pour creamed mixture into crust.
For topping: Top with pineapple, Cool Whip and pecans.
