Blackcurrant Sorbet

Ingredients: 750
g
Blackcurrants 225
g
Demerara or brown sugar 150
ml
Water
Directions:
Wash and drain the strigged blackcurrants. Meanwhile, over gentle
heat, dissolve the sugar in the water. Add the blackcurrants, bring
to the boil and cook 5 minutes, boiling very gently.
Pass the fruit through a vegetable mill fitted with a fine disc,
and then through a fine sieve or chinoise.
Freeze as usual in an ice cream maker. When serving, pour over a
little cr*me de cassis (if wanted) and decorate with fresh mint
leaves.
