Bob's Apple Scotch Pie

Ingredients:

tart apples -- pared,
sliced

c
brown sugar 1/4
c
water 1
tb
fresh lemon juice 1/4
c
flour 2
tb
granulated sugar 1
t
vanilla 3/4
ts
salt 3
tb
butter
Directions:
Combine apples, brown sugar, water and lemon juice in a saucepan;
cover and cook slowly until apples are just tender, about 7 or 8
minutes; blend flour and granulated sugar; add to apples and cook,
uncovered, stirring, until mixture thickens, about 2 minutes; remove
from heat; add vanilla, salt and butter; cool; continue with 2-crust
9-inch pie; bake 40-45 minutes at 425~.
