Bonnie's Fresh Lemon Pie

Mix sugar, cornstarch, and salt together. Using wire whisk,
gradually blend in cold water, then lemon juice. Add beaten egg yolks,
blending very thoroughly. Add butter and blend in boiling water
gradually using a rubber scraper. Bring to a full boil over high
heat. Reduce heat slightly as mixture thickens. Boil for 1 minute or
until thick. Put in lemon extract and immediately take off heat. Pour
into baked pie shell. Beat egg whites until foamy. Add sugar one
teaspoon at a time. Continue beating until mixture holds stiff peaks.
Spread over lemon mixture, sealing edges. Bake at 350 degrees until
lightly tipped with golden brown.
