Breakfast Cookies

Ingredients:
1  cup  shortening
1  cup  brown sugar
1  cup  white sugar
2    eggs
1  tsp  vanilla
1  tsp  baking soda
1 1/2  cups  flour
3  cups  rolled oats
1/2  cup  finely diced dried apricots
1/2  cup  raisins
1/2  cup  chopped dates
1  cup  chocolate chips
1  cup  flaked coconut
1    mashed banana

Directions:
Cream shortening and sugars. Add eggs and vanilla and beat until light. Mix flour and baking soda. Add alternately with rolls oats to sugar mixture. Stir in remaining ingredients. (If necessary add extra flour). Drop by spoonfuls onto ungreased cookie sheets. Bake at 350F for 10 minutes or until lightly browned. Allow to cool on cookie sheet one minute before removing to racks to continue cooling.
