Buttermilk Pie #2

1/2  cup  butter
3    egg yolks
1/2  teaspoon  salt
1  tablespoon  lemon juice
3    egg whites
2/3  cup  sugar
3  tablespoons  flour
1  teaspoon  grated lemon rind
2  cups  buttermilk, scalded

Cream butter and sugar; add egg yolks, one at a time, beating well after each addition. Add flour, salt and lemon rind and juice; mix well. Add hot buttermilk and fold into stiffly beaten egg whites. Pour into 10" baked pie shell (sprinkle with nutmeg, if desired) and bake at 425 degrees 10 minutes. Reduce heat to 350 degrees and bake another 30 minutes.
