Cream cheese,

Directions:
Preheat oven to 350 degrees. To make cake, combine the flour, baking soda, baking powder, salt and cinnamon. Add the sugar, oil and eggs and mix well. Blend in the pineapple, carrots and coconut and 1 cup chopped walnuts if desired. Pour batter into greased and floured 9 x 13 inch cake pan, you can also use round layer pans. Bake 30-40 minutes, don't under bake. When cake has cooled, frost with cream cheese icing. ICING: Combine the butter, cream cheese, powdered sugar and vanilla until the mixture is creamy.
