Directions:
3/4 c shortening 1/2 c butter 2 c sugar 1 egg 2 1/2 c flour 1/2 c
unsweetened cocoa
Filling: 2 c powdered sugar 1/2 c butter 2 Tbsp heavy cream 2 Tbsp
vanilla
Process/mix the shortening and butter. Gradually beat in sugar and
egg, beating well after each addition, until mixture is light and
lemon-colored. Sift flour & cocoa and add to creamed mixture. Shape
dough into several rolls, each 1" in diameter. Wrap in wax paper and
refrigerate for several hours or overnight.
Preheat oven to 375 degrees. Unwrap & cut rolls of dough into 1/8"
slices. (For more authentic looking cookies, it's a nice idea to
impress a fancy design in the top layer of the cookie with a butter
mold or clean rubber stamp just before baking!) Place on ungreased
sheet & bake for 5-8 minutes. Cool before adding the filling.
To make filling, cream powdered sugar & butter together; add cream &
vanilla.
Create a cookie "sandwich" with two cookies & a generous dab of
filling.
Cookies will keep for up to 2 weeks in a cookie jar and for 4-5
months in the freezer.
