Cream Puffs

Ingredients:

-----Pastry-----
1  cup  Water
1/2  cup  Unsalted Butter
1  cup  Flour
4    Eggs, at room temperature

-----Cream Filling-----
2  cups  Milk
3/4  cup  Sugar
1/2  teaspoon  Salt
3  tablespoons  Cornstarch
3    Egg Yolks
1  teaspoon  Vanilla

Directions:
1. Preheat oven to 425.

2. Pastry: Boil water and butter. Stir in the flour all at once and stir by hand until mixture forms a ball and doesn't stick to the sides of the pot. Remove pot from the heat. Add the eggs, one at a time, beating well after each addition (this part may be done in the food processor). Drop from a spoon onto an ungreased cookie sheet and bake for 40 minutes.

3. Cream Filling: Cook all but the vanilla until thick, over medium heat. Add vanilla when the mixture has cooled.

4. Assemble: Slice in half, remove part of center, and fill with cream filling.
