Pastry: Boil water and butter. Stir in the flour all at once and stir by hand until mixture forms a ball and doesn't stick to the sides of the pot. Remove pot from the heat. Add the eggs, one at a time, beating well after each addition (this part may be done in the food processor). Drop from a spoon onto an ungreased cookie sheet and bake for 40 minutes.
Cream Filling: Cook all but the vanilla until thick, over medium heat. Add vanilla when the mixture has cooled.
Assemble: Slice in half, remove part of center, and fill with cream filling.
Preheat oven to 425.
