Double Chocolate Brownies 3

Directions:
Melt 125gm/4 oz of bitter or plain cooking chocolate in a bowl over a pan of just-simmering water. Add 50gm/2 oz of butter cut into cubes and and stir until blended with the chocolate. Beat 2 eggs together with 175gm/6 oz soft brown sugar and 1 tsp of vanilla essence.Sieve 75gm/3 oz plain flour with a pinch of baking soda and salt. Fold the flour into the egg mixture and add 50 gm/2 oz EACH of plain and milk chocolate, and 50 gms/2 oz of brazil nuts; all three ingredients roughly chopped into chunks. Stir into the melted chocolate. Pour into a greased and base-lined 20cm/8 inch square baking tin. Bake for 25 minutes on 180C/350F. They turn fudgy as they cool. Cut into squares.
