Family Favorite Peach Pecan Cobbler

Ingredients:
3/4  cup  Sugar
1  tablespoon  Cornstarch
1/2  teaspoon  Ground Cinnamon
1/4  cup  Water
4 1/2  cups  Peaches, peeled and sliced
1  cup  Self-Rising Flour, see notes
1  teaspoon  Sugar
1/4  cup  Shortening
1/3  cup  Buttermilk
2  tablespoons  Butter or Margarine, melted
2  tablespoons  Brown Sugar
1/2  cup  Chopped Pecans
    Vanilla Ice Cream, optional
   

Directions:
1. In a medium saucepan, combine the 3/4 cup sugar, the cornstarch and cinnamon; stir in water. Cook and stir till thickened and bubbly. Add peaches; return to boiling. Reduce heat and cook for 2 mins more. Keep warm over very low heat.

2. In a medium bowl, combine flour and 1 tsp sugar. Cut in shortening till mixture resembles coarse crumbs. Add buttermilk and stir till just moistened. Turn out onto a lightly floured surface. Knead dough gently for 10 to 12 strokes. Roll into a 9 x 6-inch rectangle.

3. Combine butter and brown sugar. Spread over dough to within 1/2 inch of the edge. Sprinkle pecans evenly over all. Roll up dough jelly-roll style, starting with short side. Cut cross-wise into six 1-inch pieces.

4. Pour hot peach mixture into an 8 x 8 x 2-inch (2-qt square) baking dish. Place pecan rolls on top. Bake in a 400 F oven for about 25 mins or till golden brown. Cool for about 30 mins and serve warm, with a scoop of ice cream, if you like.
