Florida Surprise Key Lime Pie

Ingredients:
fudge layer: 1/2

chocolate fudge topping 2/3

chopped macadamia nuts
filling: 1

unflavored gelatin 1/4

water 1

granulated sugar 1/4

cornstarch 1
c
milk
egg yolks,
lightly beaten
1/3
c
key lime juice 1/4
c
butter flavored crisco 1
c
dairy sour cream
topping: 2
c
whipping cream 1/4
c
confectioners sugar
chocolate shavings
Directions:
9-inch single crust pie dough. This recipe comes from the American
Pie Celebration cookbook put out by Crisco.This recipe won for the state
of Florida,and went on to compete in the national bake-off. Heat oven
to 425. For crust prepare dough according to recipe on crisco can.
Decorate edge as desired. Prick bottom and sides thoroughly with fork
(50 times) to prevent shrinkage. Bake at 425 for 10 to 15 minutes or
until golden brown; cool. For fudge layer,spread fudge topping over
bottom of crust. Heat topping gently if too thick to spread. Sprinkle
with nuts. For filling, soften gelatin in water in top of double boiler.
Place over boiling water. Stir until dissolved. Combine sugar and
cornstarch in 2 quart saucepan. Stir in milk until smooth. Stir in egg
yolks and lime juice. Add butter flavor crisco. Cook,stirring
constantly on medium heat until mixture comes to a boil. Boil one
minute. Remove from heat. Stir in gelatin mixture slowly. Pour into
large bowl. Chill 40-50 minutes. Fold in sour cream. Pour into baked pie
shell. Chill 2 hours. For topping, combine whipping cream and
confectioners sugar. Beat until stiff. Pile on top of pie. Garnish with
chocolate shavings.
