Grandma's Chocolate Pie

Ingredients:
2  tb  cocoa powder, heaping
1  c  sugar
1/2  c  flour, all-purpose
1/2  t  salt
2    eggs, separated
2  c  milk
1  tb  butter
1  9 inch  pie crust, baked
    whipped cream
    or whipped topping

Directions:
Mix cocoa, sugar, flour and salt together in the top of a double boiler; set aside. Beat egg yolks; reserve whites and set aside. In a separate pan, heat milk over low heat. Pour warmed milk over cocoa mixture; stir to blend. Cook milk/cocoa mixture in the top of double boiler, stirring constantly, until mixture begins to thicken. Remove a small amount (about 1/4-1/2 cup) of chocolate mixture. Stir into beaten egg yolks. Add egg yolk mixture to chocolate mixture in the top of double boiler. Cook until thick, stirring frequently. Add butter and cook 1 minute longer. Remove from heat. Cool slightly. In a separate bowl, beat egg whites until light but not stiff. Fold in chocolate mixture. Spread into prepared pie shell. Bake 15 minutes at 325 degrees. Cool pie on rack. Chill well before serving. Garnish with whipped cream and shaved chocolate, if desired.
