Green Beans with Garlic

Ingredients:
4  teaspoons  soy sauce
1  teaspoon  sugar
1  tablespoon  dry sherry, or water
1  tablespoon  sesame seeds
1 1/2  tablespoons  salad oil
3  cloves  garlic, minced or pressed
1  tablespoon  minced ginger
1  pound  green beans, diagonally into 2-inch lengths
   

Directions:
1. Stir together soy, sugar and sherry; set aside. In a wok or wide frying pan, toast sesame seeds over medium heat until golden (about 3 minutes), stirring often. Remove from pan and set aside.

2. Increase heat to medium-high and pour oil into pan. When oil is hot, stir in garlic, ginger and beans; cook, stirring, for 1-1/2 minutes. Stir in soy mixture; reduce heat to medium, cover, and cook until beans are tender-crisp to bite (about 7 more minutes).

3. Uncover, increase heat to high, and boil, stirring, until almost all liquid has evaporated (1 to 3 minutes). Pour onto a warmed platter and sprinkle with sesame seeds.
