Hawaiian - Pineapple Carrot Cake

shredded carrots 2
tablespoons
butter,
softened

powdered sugar,
sifted

teaspoon
grated lemon peel 1/4
teaspoon
mace 1/4
cup
pineapple,
well drained
Directions: 1.
Beat oil, sugar and vanilla together. Beat in eggs one at a time, beating well after each addition. Sift flour, salt, baking powder, soda, and spices together. Stir into creamed mixture, alternating with carrots and coconut. Fold in drained pineapple. Bake. Ice with Lemon Mace Icing.

Icing: Mix all ingredients well.
