Categories: Desserts / Pies & Pastries

10  ounces  frozen strawberries or raspberries, thawed
1/2  cup  sugar, or to taste
1  tablespoon  lemon juice
2  large  egg whites
3/4  cup  whipping cream
1    baked pie shell or crust

In a large bowl, combine berries, sugar, lemon juice, and egg whites. Beat with an electric mixer until soft peaks form and mixture is very thick (15 to 20 minutes). In a separate bowl, whip the cream to soft peaks and fold into berry mixture. Gently pile filling high in pie crust and freeze until firm. About 30 minutes before serving, transfer pie from freezer to refrigerator.
