Perfect Peppermint Patties

Author/Submitted by: Morris Hymes <mhymes@DC.INFI.NET>
Servings: 60
Categories: Chocolate / Cookies / Desserts

Ingredients:
1  Pound  Confectioner's Sugar
3  Tbsp  Butter Or Margarine, softened
2  To 3 Tsp  Peppermint Extract
1/2  Tsp  Vanilla Extract
1/4  Cup  Evaporated Milk
12  Ounces  Semisweet Chocolate Chips, (2 cups)
2  Tbsp  Shortening

Directions:
In a bowl, combine first four ingredients. Add milk and mix well. Roll into 1-in. balls and place on a waxed paper-lined cookie sheet. Chill for 20 minutes. Flatten with a glass to 1/4 in.; chill for 30 minutes. In a double boiler or microwave-safe bowl, melt chocolate chips and shortening. Dip patties; place on waxed paper to harden. Yield: about 5 dozen. David, here's a chocolate recipe I tried for my Cookie Exchange party last year and these patties are really tasty. The recipe came from the Dec. '94 issue of "Taste of Home" magazine.
