Directions:
2 c cake flour 1 tsp baking powder 1 tsp baking soda 1 tsp salt 1 tsp
cinnamon 1/2 tsp cloves 1/2 tsp nutmeg
Cream together in mixer: 1/2 c butter 3/4 c sugar 3/4 c lt brown
sugar 3 eggs 1 c buttermilk 1/2 tsp almond extract 3/4 c cooked
prunes, chopped + chopped prunes for garnish 1 c walnuts, chopped
fine + walnuts for garnish Cherries for garnish
Coffee Butter Frosting: 1 lb powdered sugar 1/2 c butter 1 egg 4 tsp
powdered instant coffee (more for stronger flavor) 1 Tbsp cream 1 tsp
vanilla
Sift together the flour, baking powder, soda, salt, cinnamon, cloves,
and nutmeg. Cream together the butter, sugars, and eggs. Add the
buttermilk and almond extract alternately with the dry ingredients.
Add cooked prunes and 1 c walnuts. Pour into 2 (9") pans and bake at
375 degrees for 30-35 minutes.
When cool, frost with Coffee Butter Frosting (below) and top with
chopped prunes, walnuts and cherries.
Coffee Butter Frosting: Mix together the powdered sugar, butter, egg,
cofffee, cream and vanilla.
