Pumpkin Cheese Pie (Diabetic)

Ingredients:

Cheese Layer
8  ounces  softened cream cheese
2  tablespoons  sugar substitute
1  teaspoon  vanilla
1    egg

Pie Layer
1 1/2  cups  canned pumpkin
1  cup  evaporated milk
2    eggs
2  tablespoons  sugar substitute
1 1/2  teaspoons  pumpkin pie spice
   
   
1    Pie shell, unbaked

Directions:
1. For cheese layer, combine cream cheese, sugar substitute, vanilla, and 1 egg in mixing bowl. Stir to mix well, spread in bottom of unbaked pie shell.

2. For pie layer, combine pumpkin, evaporated milk, 2 eggs, sugar substitute, and pumpkin pie spice in a mixing bowl, beating to blend thoroughly. Carefully pour over cheese layer. Bake at 350 degree for 65 to 70 min or until knife inserted comes out clean.
