Quick Peach Cobbler (pat Stockett)

Ingredients:
    Here's our favorite Bisquick
    Recipe
    Things than peaches. I can
    Blackberries and use this
    Basic
    Recipe for the topping.
    With that I add a squirt of
    Lemon juice
    And some nutmeg, check that
    It's sweet enough and that
    There's
    Enough cornstarch to thicken
    The different sized amount
    Fruit.
    I also put a sprinkling of
    Sugar on top of the biscuit
    Crust
    Before baking. Sometimes I
    Use all milk and have even
    Used plain
    Water, but that's not quite
    As good.

Directions:
29 oz can sliced peaches 3 Tbsp cornstarch 1/2 tsp cinnamon 1 c Bisquick 1 Tbsp sugar 1/4 c milk 1/4 c sour cream Preheat oven to 400 degrees. Combine peaches (with syrup), cornstarch and cinnamon in a large saucepan. Cook, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Pour into an ungreased 1-1/2 quart casserole. Keep hot in oven while preparing topping. Topping: Stir Bisquick, sugar, milk, and sour cream to a soft dough. Drop by 6 spoonfuls onto hot peach mixture. Bake 20 to 25 minutes or until topping is light brown. Serve warm. 6 servings Betty Crocker's Bisquick Cookbook
