Sour Cream Chocolate Cake (Freddi Michael)

Servings: 4
Categories: Cakes / Chocolate / Desserts

Ingredients:
1  c  Boiling water
4  oz  Baking chocolate
1/2  c  Butter
2  c  Sugar
2    Eggs
8  oz  Sour cream
2  c  Flour
1  t  Baking powder
1  t  Baking soda
1/2  ts  Salt

Directions:
Frosting: 1/2 c butter 1 tsp vanilla 1/4 c milk 1 lb powdered sugar In a sm bowl, pour boiling water over chocolate and set aside. In lg bowl, cream butter with sugar on high speed. Add eggs one at a time, beating until light and fluffy. Add sour cream and let mixer beat itself if you have a free-standing mixer, while you empty the dishwasher or read the paper... the longer this mixture beats, the lighter the cake will be. Let it go 5 minutes or more. Sift flour with baking powder, soda, and salt. Gradually add to creamed mixture and beat only until combined. (Taste at this point... ooo, my downfall!!) Stir in chocolate mixture and combine thoroughly or you'll have white patches in finished cake (another downfall of mine! sigh). Pour into 2 (9") or 3 (8") greased and floured cake pans and bake for 40 mins at 350 degrees. Cool before filling and frosting. Frosting: Combine butter, vanilla, milk, and powdered sugar and beat on high speed until smooth. Add milk if too stiff (just a little!!) or more sugar if too liquid-y.
