Southern Sweet Potato Pie

Ingredients:
3  medium  Sweet potatoes
    (about 3 3/4 cups mashed)
1/4  cup  Butter
2    Eggs, beaten
1/2  cup  Sugar
1/4  teaspoon  Salt
3/4  teaspoon  Nutmeg
1/2  cup  Evaporated milk
1  teaspoon  Vanilla
1    Pastry shell (9" unbaked)

Directions:
Scrub potatoes; place in saucepan and cover with boiling water, cook until soft. Peel potatoes while hot , mash thoroughly. Beat in butter, eggs, sugar, salt and nutmeg. Beat until creamy. Stir in milk and vanilla. Pour into pastry shell. Bake at 450 degrees for 15 minutes, reduce heat to 300 degrees and bake for 25 to 30 minutes or until set.
