Banana Paradise Pie

Ingredients:
    sliced ripe bananas (5-6)
1/4  c  pineapple juice
2  tb  lemon juice
1 1/2  ts  grated lemon rind
1/4  c  sugar
1/2  t  cinnamon
1  t  cornstarch
    pastry for 1 8-inch pie crus

Directions:
Soak bananas in pineapple and lemon juice for 30 minutes. Drain and save juices. Sprinkle grated lemon rind, sugar and cinnamon over banana slices. Toss lightly and place in pastry lined pie plate. Warm juices saved from marinating bananas and thicken with cornstarch. Add it to the pie. Cover with the following topping. Topping: 1/2 cup chopped macadamia nuts 3/4 cup flour 3/4 cup brown sugar 3/4 teaspoon cinnamon 6 Tablespoons butter Combine all ingredients and cut with two knives or pastry blender till lumpy, loose mixture forms .
