Chocolate Meringue Pie #1

Ingredients:
1  c  sugar
3  tb  cornstarch
1  dash  salt
2  c  milk
3    eggs, separated
1  square  unsweetened, (1-ounce)
1  tb  butter or margarine
1  t  vanilla extract
1    baked 9-inch pastry shell
1/2  t  cream of tartar
1/4  c  plus
2  tb  sugar

Directions:
Combine 1 cup sugar, cornstarch, and salt in a heavy saucepan; mix well.Combine milk and egg yolks; beat with a wire whisk 1 to 2 minutes or until frothy. Gradually stir into sugar mixture, mixing well. Cook over medium heat, stirring constantly, until thickened and bubbly. Remove from heat; add chocolate, butter, and vanilla, stirring until chocolate and butter melt. Spoon mixture into pastry shell; set aside.Beat egg whites and cream of tartar at high speed of an electric mixer 1 minute. Gradually add 1/4 cup plus 2 tablespoons sugar, 1 tablespoon at a time, beating until stiff peaks form and sugar dissolves (2 to 4 minutes). Spread meringue over hot filling, sealing to edge of pastry. Bake at 350 degrees for 10 to 12 minutes or until golden brown. Yield: one 9-inch pie. By KKBG35A RUTH BURKHAR
