Chocolate Meringue Pie (lf)

Ingredients:
1 1/2  c  graham cracker crumbs
2  tb  honey
1  tb  oil
3/4  c  sugar
6  tb  cocoa powder
1/3  c  flour, -=or=-
3  tb  cornstarch
1/4  t  salt
2  c  milk, skim
1    eggs, beaten
2  ts  vanilla
3    eggs, whites
1/4  t  cream of tartar
1/2  t  vanilla
6  tb  sugar

Directions:
Combine the graham cracker crumbs, honey, and oil. Mix well and press into a 9-inch pie pan. Bake for 10 minutes at 350F. Meanwhile, in a medium saucepan, combine the 3/4 cup of sugar, cocoa powder, flour, and salt. Place over moderate heat and gradually stir in milk. Cook and stir until thickened and bubbly. Continue to cook 1 to 2 minutes. Remove from heat. Stir a small amount of the hot mixture into the beaten egg. Add egg to saucepan, return to heat, and cook 2 more minutes. Stir in the 2 tsps of vanilla. Pour the mixture into the prepared crust. To make topping, beat egg whites with cream of tartar and the 1/2 tsp of vanilla until the mixture forms soft peaks. Gradually add the 6 Tblspoons of sugar, beating until glossy and the mixture forms stiff peaks. Spread the topping over the filling. Bake at 350F until golden brown, about 12 minutes.
