Fudgy Tennesee Pie

Ingredients:
    pastry for a single-crust pi
1/2  c  butter
3  oz  unsweetened chocolate
4    eggs
1 1/2  c  sugar
3  tb  light corn syrup
1  t  vanilla extract
1/4  t  salt
    ice cream

Directions:
Recipe by: Midwest Living, October 1994 Preheat oven to 450 degrees. Line a 9-inch pie plate with pastry; flute the edge. Line with a double thickness of foil. Bake for 8 minutes. Remove the foil; bake for 4 to 5 minutes longer, or until the crust is set and dry. When the crust is done, reduce the oven temperature to 350 degrees. In a heavy saucepan, melt the butter and chocolate together over low heat, stirring frequently. Remove from the heat and cool slightly. Meanwhile, in a large mixing bowl, beat the eggs with an electric mixer on medium speed for 4 to 5 minutes, or until thick and light colored. Beat in the sugar, corn syrup, vanilla extract and salt. Then beat in the chocolate mixture. Pour into the partially baked crust. Bake for 35 minutes, the center will be soft. Do not over bake. Cool. Serve warm or cool with ice cream.
