New Orleans Pecan Pie

Ingredients:
2    eggs, separated
1  c  sour cream, 8 oz
1  c  sugar
1/4  c  all-purpose flour
1/2  t  vanilla extract
1/4  t  salt
1  9 inch  pie crust, baked
1  c  brown sugar, packed
1  c  pecans, chopped

Directions:
1. In saucepan, combine egg yolks, sour cream, flour, vanilla and salt. Cook and stir over medium heat until thickened, about 5 minutes. Pour into pie shell; set aside.

2. In large mixing bowl, beat egg whites until soft peaks form. Gradually add brown sugar; continue to beat until stiff.

3. While filling is still warm, spread egg whites topping over filling. Sprinkle with chopped pecans. Bake at 375 degrees for 12-15 minutes or until golden.

This is a wonderful new way to make the traditional pecan pie.
