Peachy Ozark Cobbler

Ingredients:
3  cups  Cake Flour
1  teaspoon  Salt
1  cup  Lard, or Shortening
1/3  cup  Ice Cold Water, up to 1/2 cup

---FILLING---
7  cups  Fresh Peaches, peeled and thinly sliced
3/4  c  Sugar
2  tablespoons  All-Purpose Flour
1/4  teaspoon  Ground Nutmeg
3  tablespoons  Butter Or Margarine
    Butter Or Margarine, melted
    Sugar
    Ground Nutmeg

---OZARK DIP---
1  cup  Milk
1  teaspoon  Sugar
1  dash  Ground Nutmeg

Directions:
1. Combine cake flour and salt. Cut in lard till mixture resembles coarse crumbs. Gradually pour in water; blend to form pastry dough. Divide into 2 portions of 1/3 and 2/3.

2. On waxed paper, pat or roll larger portion of pastry into a 12 x 12-inch square. Fit into bottom and up sides of a 2-qt square baking dish. Trim pastry.

3. Toss peaches with 3/4 cup sugar, flour and 1/4 tsp nutmeg; spoon into dish. Dot with 3 Tbs butter or margarine.

4. Roll remaining pastry into a 9 x 7-inch rectangle. Cut into 1-inch wide strips. Arrange pastry strips over peaches; trim to fit dish. Brush with melted butter or margarine. Sprinkle with some sugar and nutmeg.

5. Bake in a 375 F oven for 55 to 60 mins or till pastry browns. Pour Ozark Dip over servings. Makes 8 to 10 servings.

6. OZARK DIP: Mix 1 cup milk, 1 tsp sugar and dash ground nutmeg.
