Sunbeam One Egg Cake

Ingredients:
2  c  Sifted cake flour
1/2  ts  Salt
2 1/2  ts  Double acting baking powder
1  c  Granulated sugar
1/3  c  Soft shortening
3/4  c  Milk
1 1/4  ts  Vanilla
1  ea  Egg, unbeaten

Directions:
Cover frypan, close vent. Preheat to 280 degrees F while mixing cake. When preheated, grease well, using a pastry brush. Sprinkle lightly with flour, brushing the flour and shortening mixture over surface. Sift together into large electric mixer bowl, flour, salt, baking powder and sugar. Add shortening, milk and vanilla. Beat on low speed until flour is blended in, then on medium speed for 2 minutes, scraping bowl. Add egg. Beat 1 minute longer, scraping bowl. Add batter to prepared frypan, cover, bake until top of cake is no longer moist -- about 30 minutes. Open vent last 5 minutes of baking time. Loosen well around edges with a spatula. Invert on a cake cooler rack. Let stand a few minutes before lifting off frypan. Cool and frost as desired.
